Green Pea Coleslaw Salad

Green Pea Coleslaw salad banner Summer is just around the corner and I know most of us do not want to be slaving over a hot stove!  I have this habit (and it usually happens by the end of the week) where I usually invent develop a recipe based on the ingredients I have in my kitchen.  This is one of those recipes I “developed”.  I really should call it quick green pea coleslaw salad as it takes just a few minutes to throw together (I know THROW is not the greatest cooking term, but…well… you’ll see and saying that amount of words for a “quick” recipe isn’t quick!) By the way, this is a very kid/teen friendly recipe, my kids love it!

Green Pea Coleslaw Salad

  • Servings: 4-6

  • 1 1/2 cups of frozen green peas
  • 1 bag of 3 colour coleslaw mix 397g (14 oz)
  • 1/2 a small onion diced or 2 green onions
  • 1/2 cup of mayonnaise
  • 2 tbsps. of white vinegar
  • 1 tbsp. of sugar
  • 1 1/2 tsps. of salt
  1. Place frozen peas in a microwave safe bowl add about 2 cups of water and microwave on high for 2 minutes. The goal is to have unfrozen peas that are NOT warm, so check after a minute as microwave temps vary.  If they get warm place in the freezer for a few minutes.
  2. Drain peas and add coleslaw mix to the bowl (feel free to use all or half depending on your tastes).
  3. Finely chop onion and add to the mixture in the bowl.  Stir mixture.
  4. Place mayonnaise, vinegar, sugar and salt in a medium size jar with a lid.  Cover the jar and shake until sugar and salt are dissolved.
  5. Add dressing to the pea/coleslaw mixture and stir until everything is coated well. Refrigerate until ready to serve.

This is a great salad to go with pasta or those grilled meats!  Yay Summer!
